Chubby Hubby Cookies and a little experimentation.

It's been far too long since I last baked. I was way overdue.




Chubby Hubby Cookies from here.

3/4 cup butter, softened to room temperature
1 cup granulated sugar 
1/2 cup firmly-packed light brown sugar
 
1 large egg
 
1 teaspoon vanilla
 - for fun, I put in 1/2 almond extract and 1/2 vanilla
2 cups all-purpose flour
 
1 teaspoon baking soda
 
3/4 cup semi-sweet chocolate chips
 
3/4 cup peanut butter chips
 
1/2 cup crushed pretzel sticks


1. Preheat oven to 350 degrees.

2. In the bowl of a stand mixer attached with the paddle attachment, beat butter and sugars until fluffy. Beat in egg and vanilla.
 

3. Sift flour and baking soda together. Beat into batter on low speed. Stir in chocolate chips, peanut butter chips and crushed pretzels.
 

4. Drop by rounded tablespoons (or use a small scoop) onto prepared cookie sheets. Bake 11 to 14 minutes until golden on the bottom and just set in the middle. Cool on wire racks.

These are so good. The roomie and I are ruining our post-Tgives/pre-Xmas diets.

I doubled the recipe, but had leftover dough. I chopped up half of an apple, threw in some cinnamon, and called it another batch.


And they were just as delicious. We like to pretend they're more healthy.


The smell of cookies baking next to our Christmas decorations is really one of the best parts of the December. I'm so giddy with the holidays!
